I'm keen. Great as an additional root veg with the roast.

Also useful are sweet potatoes. And Jerusalem Artichokes, except those are lethal for an afternoon of farting after consumption.

LOve em. Cut into chunky bits (with some carrots)and reeeeeally slow roast them. Chop up a load of garlic and crush it up with thyme and lots of honey. Smear over an roast the bastards til the get crispy round the edges. Baste occasionally as the cook. great with a roast pork loin studded with garlic an thyme. Love it.

Par-boil, coat with flour and grated parmesan cheese then roast in butter - wonderful or cut very fine and make into crisps (ro, this works well for beets too)

There's a company called Tyrells that does crisps. They also do Parsnips chips. Simply fried and seasoned. Wonderful with a nice real ale and some sharp cheddar. They also do the same with Beets.
